Pan-Broiled Steak
This classic pan-broiled steak recipe from 1900 delivers a rich, savory flavor with a simple preparation. The steak is cooked directly under the broiler, resulting in a beautifully seared exterior and a tender, juicy interior. Seasoned with salt, lemon juice, and parsley, this dish is a satisfying and elegant main course.
Ingredients
- 2 lb Sirloin steak
- 1 tablespoon Butter
- 1/2 teaspoon Salt
- 1 tablespoon Fresh parsley, chopped
- 1 tablespoon Lemon juice
Instructions
- 1Wipe the steak with a damp cloth.
- 2Heat a tin pan until sizzling hot. Place the steak in the pan and cook directly under the broiler flame, turning frequently with spoons. A steak an inch and a half thick should be cooked for 8-10 minutes total, adjusting for desired doneness. (Broil at 500°F / 260°C)
- 3Place the steak on a hot platter. Sprinkle with salt, lemon juice, and parsley. Dot with butter. Serve very hot.
