Lemon Rice Pudding

Ingredients
- 2/3 cup Cooked rice
- 1 tablespoon Lemon juice
- 1/4 teaspoon Salt
- 1/4 cup Sugar
- 1 cup Milk
- 1 tablespoon Powdered sugar
- 1 large Egg
- 1 teaspoon Lemon juice
Instructions
- 1In a bowl, beat the egg yolk. Add the sugar, salt, and 1 tablespoon of lemon juice. Stir in the milk and cooked rice.
- 2Cook the mixture in a saucepan over medium heat for 1 minute, stirring constantly to prevent scorching.
- 3Pour the rice mixture into a well-buttered pudding dish.
- 4In a separate bowl, beat the egg white until very stiff. Add the powdered sugar and 1 teaspoon of lemon juice.
- 5Pile the meringue lightly on top of the pudding. Bake in a slow oven at 300°F (150°C) for 30 minutes.
