Ingredients

  • 2/3 cup Cooked rice
  • 1 tablespoon Lemon juice
  • 1/4 teaspoon Salt
  • 1/4 cup Sugar
  • 1 cup Milk
  • 1 tablespoon Powdered sugar
  • 1 large Egg
  • 1 teaspoon Lemon juice

Instructions

  1. 1In a bowl, beat the egg yolk. Add the sugar, salt, and 1 tablespoon of lemon juice. Stir in the milk and cooked rice.
  2. 2Cook the mixture in a saucepan over medium heat for 1 minute, stirring constantly to prevent scorching.
  3. 3Pour the rice mixture into a well-buttered pudding dish.
  4. 4In a separate bowl, beat the egg white until very stiff. Add the powdered sugar and 1 teaspoon of lemon juice.
  5. 5Pile the meringue lightly on top of the pudding. Bake in a slow oven at 300°F (150°C) for 30 minutes.
