Corn Gems (Six gems)
These delightful corn gems offer a comforting taste of the past with a touch of sweetness. Ingredients
- 1/2 cup Cornmeal
- 3 tablespoons Granulated sugar
- 1/2 cup All-purpose flour
- 2 teaspoons Baking powder
- 1/4 teaspoon Salt
- 1 Large egg
- 1/2 cup Milk
- 1 tablespoon Butter, melted
Instructions
- 1In a medium bowl, whisk together the cornmeal, sugar, flour, baking powder, and salt.
- 2In a separate bowl, whisk together the egg, milk, and melted butter.
- 3Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- 4Preheat oven to 350°F (175°C). Pour batter into well-buttered muffin pans, filling each cup about halfway. Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
