Khandavi is delicious and healthy snacks from Gujrat.....it is my kids favorite snacks...with some tips and tricks we can easily made this at home....

Step 1
Take a bowl mix the gram flour , butter milk, turmeric powder and salt. Suga 1 tspn and lemon juice of two lemons...now whisk it and make a uniform batter
Step 2
Now make a chilli ginger paste and add it to the kandavi batter
Step 3
Cook the Khandvi batter in a non-stick pan, low and slow. It thickens pretty quickly so you want to give yourself time to get those pesky lumps out.
Step 4
Pay close attention to the consistency of the batter. It’s ready when the batter no longer falls off the spatula when lifted and begins to set on the sides of the pan.

Now spread the batter quickly in the brig trays or you can spread foil on the kitchen platform to spread the batter

Spread thin layer of batter as quickly as possible...now let it cool for 10 minutes and cut into equal sized strips
Step 7
Gently roll each strip tightly. Then place them in a serving tray or plate next to each other or stack them neatly.
Step 8
Now final step ie to temper khandvi rolls....heat the oil in a pan now add mustard seeds ,sesame seeds, green chillies, curry leaves...allow them to crackle now quickly pour this hot tempering mixture along with the oil on the khandvi rolls.
Step 9
Garnish it with grated coconut and coriander leaves...and serve it with coriander chutney......
