Whole Green Moong Khichdi
This is a lovely comfort food which can be eaten with raita or kadhi.
Ingredients
- 2 cups Whole Green Moong (Soak for 8 hours)
- 1 cup White Rice
- 3 units Green Chillies
- 1 teaspoon Mustard Seeds
- 2 units Cloves
- 1 unit Bay Leaves
- 2 tablespoons Ghee
- 1 pinch Hing
- 1 unit Onions
- 2 units Tomatoes (Medium sized)
- 2 teaspoons Ginger Garlic Paste
- 1 teaspoon Cumin Seeds
- 1 teaspoon Turmeric
- 2 teaspoons Red Chilli Powder
- 1 teaspoon Garam Masala
- 1 tablespoon Salt (To taste)
- 1 handful Coriander Leaves
- 6 cups Water
Instructions
- 1Set the Instant Pot to sauté mode and add ghee. Once the ghee is hot, add mustard seeds, cumin seeds, green chillies, hing, cloves, bay leaves, and ginger garlic paste. Sauté until the raw aroma dissipates.
- 2Add onions and tomatoes to the pot and sauté until the tomatoes become mushy. Incorporate salt, turmeric, red chilli powder, and garam masala. Continue sautéing until the spices are well integrated.
- 3Mix in the soaked green moong and rice. Add 6 cups of water. Set the Instant Pot to manual mode and cook on high pressure for 10 minutes. Allow the pressure to release naturally.
- 4Garnish the khichdi with coriander leaves before serving.
