Lauki Curd Curry
This is a simple Lauki curry made with curd and can be eaten with rice.
Ingredients
- 1 unit Lauki (Bottle gourd)
- 1 teaspoon Turmeric
- 1 teaspoon Salt
- 3 units Green chillies
- 1 cup Plain yogurt (Adjust to consistency)
- 1 teaspoon Oil
- 2 teaspoons Mustard seeds
- 1 teaspoon Split and Skinless Urad Dal
- 3 units Dry red chillies
- 6 units Curry leaves
- 1 teaspoon Jeera (Cumin seeds)
Instructions
- 1Cut the lauki into small cubes. Add these cubes to a pot with water, along with slit green chillies, turmeric, and salt. Cover the pot and bring to a boil until the lauki is tender. Set aside to cool.
- 2Heat oil in a pan until hot. Add mustard seeds and allow them to splutter. Add jeera and urad dal, sauté until the urad dal turns slightly brown. Turn off the heat and add curry leaves and dry red chillies. Add this tempering to the boiled lauki.
- 3Add the yogurt to the lauki and tempering mixture. Mix well until combined. Serve with rice.
