Special Rice/Malabar Mandhi

This is a very authentic Biriyani rice which is mouthwatering!!

Ingredients

  • 2 cups Basmati Rice (Soak in warm water for 30 minutes before cooking)
  • 1 unit Tomatoes (Finely sliced)
  • 1 unit Onions (Finely sliced)
  • 0.5 teaspoon Turmeric Powder
  • 1 teaspoon Garam Masala
  • 1 tablespoon Ghee
  • 3 tablespoons Coconut Oil
  • 1 unit Dried Lemon
  • 0.5 unit Capsicum (Finely grated/sliced)
  • 1 teaspoon Ginger Garlic Paste
  • 1000 grams Chicken
  • 2 tablespoons Chilli Powder
  • 1 teaspoon Salt (Adjust to taste)
  • 3 tablespoons Curd
  • 1 cup Sunflower Oil (For frying the chicken)
  • 3.5 cups Water (Warm water for cooking rice)

Instructions

  1. 1In a pan, heat coconut oil and ghee. Once hot, add the chopped onion, tomato, capsicum, ginger garlic paste, dried lemon, salt, garam masala, and turmeric powder. Sauté until the onions become transparent.
  2. 2Add 3 and 1/2 cups of warm water to the pan. Mix well and adjust the salt. Allow the mixture to come to a boil.
  3. 3Once the water is boiling, add the soaked Basmati rice. Cover and cook for 10 minutes on medium flame.
  4. 4In a small bowl, combine red chilli powder, turmeric powder, salt, curd, and garam masala to form a paste. Spread this paste over the chicken pieces and fry them in sunflower oil until cooked through.
  5. 5Transfer the fried chicken pieces into the cooked rice and mix well. Serve hot with a suitable chutney.
