Drumstick Leaves Curry/Muringha Ila Curry
This curry is very healthy and contains a high amount of iron.
Ingredients
- 2 handful Drumstick (Vegetable) leaves
- 0.5 unit/count Onions, finely sliced (Finely sliced)
- 1.5 unit/count Green chillies, finely sliced (Finely sliced)
- 1 tsp Mustard seeds
- 3 tbsp Coconut oil
- 1 unit/count Dried red chillies
- 0.5 tsp Turmeric powder
- 1 cup Coconut, grated
- 1 tsp Fennel seeds
- 1 to taste Salt (Adjust to taste)
- 0.5 cup Water (Warm water)
Instructions
- 1In a pan over medium heat, add coconut oil. Once hot, add mustard seeds, dried red chilli, sliced onions, green chillies, and salt. Sauté until the onions become translucent.
- 2Add the drumstick leaves to the pan. Sauté for 3-4 minutes, ensuring the leaves are thoroughly cleaned before adding.
- 3In a mixer grinder, combine grated coconut, fennel seeds, and turmeric powder. Grind to a fine paste and add to the curry.
- 4Add a little warm water to the pan and adjust the salt. Allow the mixture to boil, then turn off the heat once done.
- 5The healthy and tasty drumstick leaves curry is ready to be served.
