Sambar Masala Powder

This is the sambar masala powder which has a good shelf life.

Ingredients

  • 0.25 cup Coriander seeds
  • 1 tbsp Toor Dal
  • 1 tbsp Chana Dal
  • 1 tbsp Whole Skinless Urad Dal
  • 0.5 tbsp Cumin seeds
  • 0.125 tsp Fenugreek seeds
  • 0.5 tsp Mustard seeds
  • 1 handful Curry leaves
  • 0.5 tsp Black peppercorns
  • 10 unit/count Dry red chillies
  • 0.5 tsp Turmeric
  • 0.125 tsp Asafetida

Instructions

  1. 1In a pan over low heat, dry roast the coriander seeds for about 1 minute until they release a pleasant aroma. Set aside.
  2. 2Dry roast the toor dal, chana dal, urad dal, cumin seeds, and fenugreek seeds together until the raw aroma dissipates. Set aside.
  3. 3On low flame, dry roast the mustard seeds for 30 seconds until they start to pop. Set aside.
  4. 4Dry roast the curry leaves, black peppercorns, and dry red chillies for 30 seconds. Turn off the heat and add turmeric and asafetida, stirring until aromatic. Set aside.
  5. 5Allow the roasted ingredients to cool completely, then grind them into a fine powder using a mixer grinder.
