Sambar Masala Powder
This is the sambar masala powder which has a good shelf life.
Ingredients
- 0.25 cup Coriander seeds
- 1 tbsp Toor Dal
- 1 tbsp Chana Dal
- 1 tbsp Whole Skinless Urad Dal
- 0.5 tbsp Cumin seeds
- 0.125 tsp Fenugreek seeds
- 0.5 tsp Mustard seeds
- 1 handful Curry leaves
- 0.5 tsp Black peppercorns
- 10 unit/count Dry red chillies
- 0.5 tsp Turmeric
- 0.125 tsp Asafetida

Instructions
- 1In a pan over low heat, dry roast the coriander seeds for about 1 minute until they release a pleasant aroma. Set aside.
- 2Dry roast the toor dal, chana dal, urad dal, cumin seeds, and fenugreek seeds together until the raw aroma dissipates. Set aside.
- 3On low flame, dry roast the mustard seeds for 30 seconds until they start to pop. Set aside.
- 4Dry roast the curry leaves, black peppercorns, and dry red chillies for 30 seconds. Turn off the heat and add turmeric and asafetida, stirring until aromatic. Set aside.
- 5Allow the roasted ingredients to cool completely, then grind them into a fine powder using a mixer grinder.
