Parval Sabzi/Padavalangya Upperi/Snake Gourd Sabzi

A simple and flavorful Indian side dish made with snake gourd, spices, and onions, perfect to accompany rice or bread.

Ingredients

  • 500 grams Snake gourd (Padwal)
  • 0.25 teaspoon Turmeric
  • 0.5 teaspoon Red chili powder
  • 1 medium Onions (Finely chopped)
  • 1 teaspoon Salt
  • 1 tablespoon Sunflower oil

Instructions

  1. 1Scrape the skin of the snake gourd, cut it in half lengthwise, and remove the seeds. Wash thoroughly and cut into small pieces. Set aside.
  2. 2Heat the sunflower oil in a kadai over medium heat. Add the finely chopped onions and sauté for about 1 minute until they begin to soften. Add the snake gourd pieces, turmeric, and red chili powder. Sauté for 5 minutes, stirring occasionally.
  3. 3Add salt to the kadai, cover with a lid, and cook for 5 minutes. Remove the lid and continue cooking for an additional 5 minutes, stirring occasionally, until the snake gourd is tender and the dish is dry.
  4. 4Remove from heat and serve hot as a side dish with rice or bread.
