Carrot Upperi/Poriyal/Sabji

A simple and flavorful side dish made with carrots, onions, and spices, perfect to accompany rice or curry.

Ingredients

  • 500 grams Carrot
  • 2 medium Onions (Medium size)
  • 2 units Green chillies
  • 1 sprig Curry leaves
  • 1 teaspoon Salt
  • 1 teaspoon Mustard seeds
  • 1 tablespoon Sunflower oil
  • 1 cup Water

Instructions

  1. 1Scrape, wash, and cut the carrots into small pieces.
  2. 2In a vessel, bring water to a boil and add the carrot pieces. Cover and cook until the carrots are half done. Add salt and continue cooking until fully tender. Drain excess water and set aside.
  3. 3In a kadai, heat sunflower oil and add mustard seeds. Once they splutter, add onions and green chillies. Sauté for a minute until onions are translucent.
  4. 4Add the cooked carrots and curry leaves to the kadai. Sauté on a low flame until the carrots are slightly fried and well combined with the spices.
  5. 5Transfer to a serving dish and serve hot as a side dish with rice and curry.
