Instructions
- 1Scrape, wash, and cut the carrots into small pieces.
- 2In a vessel, bring water to a boil and add the carrot pieces. Cover and cook until the carrots are half done. Add salt and continue cooking until fully tender. Drain excess water and set aside.
- 3In a kadai, heat sunflower oil and add mustard seeds. Once they splutter, add onions and green chillies. Sauté for a minute until onions are translucent.
- 4Add the cooked carrots and curry leaves to the kadai. Sauté on a low flame until the carrots are slightly fried and well combined with the spices.
- 5Transfer to a serving dish and serve hot as a side dish with rice and curry.
