Bhoondi Laddoo
A traditional Indian sweet dish prepared mainly during festival seasons, featuring deep-fried gram flour balls soaked in sugar syrup and formed into laddoos.
Ingredients
- 2 cups Basen (Chana Dal powder) (Basen is Chana Dal powder)
- 6 cups Oil
- 4 cups Sugar
- 1 inch Kesar (Saffron)
- 3 cups Water
- 0.5 cup Raisins (Optional, for garnishing)
- 0.5 cup Cashews (Optional, for garnishing)
- 2 tablespoons Ghee (For frying raisins and cashews)
Instructions
- 1Combine basen, kesar, and water to form a batter with the consistency of dosa batter. Set aside.
- 2Heat oil in a deep, large kadai over medium heat. Using a perforated spatula, pour the basen batter through the spatula into the hot oil, forming small balls. Fry until golden, ensuring they are neither too soft nor over-fried. Clean the spatula after each use to maintain shape. This will yield approximately 5 cups of bhoondis.
- 3In a large vessel, combine sugar and water. Heat until the syrup reaches a one-thread consistency when tested between two fingers.
- 4Add the fried bhoondis to the sugar syrup. Mix thoroughly to ensure even coating.
- 5Once the mixture is warm, shape it into laddoos. Optionally, fry raisins and cashews in ghee and incorporate them into the mixture before forming the laddoos.
- 6Serve the bhoondi laddoos once they have set. Enjoy as a festive treat.
