Mixed Vegetable Thoran
Thoran is a dry side dish cooked with a variety of vegetables, seasoned with spices and coconut, typical of Indian - Malabar cuisine.
Ingredients
- 3 units Knol Khol (German Turnip)
- 1 unit Potato
- 2 units White Onions
- 1 teaspoon Turmeric
- 2 units Green Chillies
- 4 tablespoons Sunflower Oil
- 2 tablespoons Raw Rice
- 2 units Dry Red Chillies
- 1 teaspoon Mustard Seeds
- 2 sprigs Curry Leaves
- 0.5 cup Coconut (Shredded)
- 1 to taste Salt
- 0.25 cup Water (For cooking vegetables)
Instructions
- 1Wash the vegetables thoroughly and chop them into small, uniform pieces. Mix with salt, turmeric, and slit green chillies.
- 2In a clay cooking pot, heat the sunflower oil over medium heat. Add mustard seeds, dry red chillies, curry leaves, and raw rice. Sauté until the raw rice turns golden brown. Add the chopped vegetables and mix well. Sprinkle with water, cover, and cook on low heat until the water is absorbed and the vegetables are tender. Stir in the shredded coconut and mix thoroughly before turning off the heat.
