Jalebi/Indian Dessert

Ingredients
- 1 cup All purpose flour
- 0.33 teaspoon Baking powder
- 0.5 teaspoon Turmeric (For color)
- 0.5 cup Split black lentils (Soaked for 2 hours and finely ground)
- 2 cups Sugar
- 6 units Green cardamom pods
- 0.5 unit Lemon
- 3 cups Oil (For frying)
- 1.5 cups Water (For sugar syrup)
Instructions
- 1In a bowl, combine 1 cup of all-purpose flour, 1/3 teaspoon of baking powder, and 1/2 teaspoon of turmeric powder. Gradually add water while stirring to form a thick, smooth batter, ensuring there are no lumps.
- 2Add 1/2 cup of soaked and finely ground split black lentils to the batter. Mix thoroughly to combine.
- 3In a saucepan, combine 2 cups of sugar and 1.5 cups of water. Heat until the mixture forms a one-string consistency syrup. Allow to cool slightly, then add cardamom powder.
- 4Fill the batter into a piping bag or a plastic bottle with a small opening.
- 5In a kadhai, heat 3 cups of oil over medium flame until hot.
- 6Carefully pipe the batter into the hot oil in a spiral shape. Fry until golden brown on both sides.
- 7Remove the jalebi from the oil and immerse in the sugar syrup for 2 minutes.
- 8Serve the jalebi hot.
