Step 1
Cut vegetables thin & longish of 1 inch length like - Bitter gourd, yellow pumkin, raw banana, ash gourd, brinjal, elephant foot yam, yard long bean & drumstick & cook it in cooker with very less water, adding turmeric & salt & by giving 2 whistles. Please note that vegetables like elephant foot yam takes longer to cook so u can half cook elephant foot yam & then add other vegetabkes.
Step 2
Next coarse grind coconut, jeera, onion, green chilly & curry leaves & add it to the cooked vegetables & boil it well.
Step 3
Finally, add curd after beating it in mixie for a second. When curd comes to a boil switch off the gas.
Step 4
Put coconut oil & curry leaves in the aviyal & mix altogether.
Step 5
Aviyal is ready to be served.
