Step 1
Peel the skin of the potatoes and cut them into small pieces, I like to cut them long. You can also cut them into small bite size pieces. Season with turmeric powder and chilli powder to ensure even coating of the masalas.
Step 2
Heat oil in a pan and add mustard seeds and half of the fennel seeds , give it a stir and then add the potatoes. roast it for some time.
Step 3
Once the potatoes are half done add sliced Onion , required salt and roast until the onions and the potatoes are fully roasted - sides turns crispy.
Step 4
Finally add the remaining half of the fennel seeds and the curry leaves for flavoring and turn off the heat.
Step 5
That's it our delicious and easy potato fry is ready to be enjoyed as a side dish for rice or any variety rice recipe.
