Step 1
Heat a pan with oil. Once the oil is hot, add mustard seeds. Once the mustard seeds crackle, add urad dal. Roast them till it turns brown. Then add 3-4 finely chopped green chillies and a few curry leaves.
Take half an onion and finely chop them. Add the finely chopped onions along with the tadka mixture prepared into the dosa batter. Add 1/2 tsp of salt and mix it well.
Step 2
Heat the Kuzhipaniyaram pan with few drops of oil in each mold. When the pan is hot enough, fill each mold to 3/4.
Partially cover it for 1-2 minutes. I do this to ensure they cook well inside.
When they are fried to golden, flip them to the other side using a wooden spoon or a chop stick.
Cook on the other side till done.
Serve it with a nice chutney.
