Step 1
Heat oil in a pan. When the oil is hot, add chopped ginger and green chillies. Stir quickly after adding these two ingredients.
Add chopped onions to it. Saute till it's cooked well (4-5 minutes) It needn't turn golden brown.
Step 2
Add finely chopped tomatoes. Stir and mix well. Let it cook for 2-3 minutes. Then keep the flame low and add salt, turmeric powder, kashmiri chilli powder and garam masala. Saute for a minute till the raw smell subsides.
Step 3
Add well beaten eggs into it. You can even break and add the eggs directly. Turn up the flame to medium level and stir well.
Stir continuously for 4-5 minutes until the eggs are cooked well. Scrub the eggs stuck on the sides of the pan using a spatula.
Just before turning off the flame, add some chopped coriander leaves and mix well.
