Step 1
Finely chop onions, green chillies and cilantro.
Step 2
Heat a pan and add some butter. Once the butter melts add the chopped green chillies and let it fry for a minute.
Step 3
Then add the chopped onions and let is fry till the onions turn translucent.
Step 4
In the mean time, beat 2 eggs along with the following ingredients: salt, pepper, turmeric, red chili powder and cilantro
Step 5
Beat the egg mixture well till you see some bubbles on the top. This will help create a fluffy omelette
Step 6
Now add the sautéed onions and green chili mixture into the egg mixture. Beat again to mix all the ingredients well.
Step 7
Add this mixture back into the same pan and keep covered on a low - medium heat.
Step 8
Once you see the surface of the omelette partially cooked, take a wide spatula and flip the omelette to cook the other side.
Step 9
Let it cook for just another minute and take it off the pan. Serve with a side of toast with some butter.
