Step 1
Set instant pot to saute mode. Add ghee
Step 2
once hot, add all the ingredients under Spices section to it. Saute it for a few minutes
Step 3
add green chillies and curry leaves. saute for around 20 seconds
Step 4
add onions to it and saute for a around 3 minutes till onions look done.
Step 5
add ginger garlic paste to it and saute till the raw smell goes away (around a couple of minutes)
Step 6
add mint leave and coriander and stir.
Step 7
add all the cut vegetables to it (potato, green beans, carrot and peas) and saute for a few minutes
Step 8
add tomatoes and continue to saute for a minute. Add the soaked rice to it (its ok if its not).
Step 9
add the milk to it
Step 10
for 2.5 cups of rice add 5 cups of water.
Step 11
add garam masala to it.
Step 12
add salt. mix it all up and taste the mixture to see if the salt is right.
Step 13
Add a little extra salt as the rice soaks it up and once its done the salt should be perfect.
Step 14
cancel saute and set to manual mode. Set the instant pot to 6 minutes and let it naturally release.
