Step 1
Peel off the beetroot and cut into small cubes and grate it.
Step 2
transfer the grated beetroot into a clay pot.pour water and adjust the salt.mix well,cover and cook on medium flame.
Step 3
now take a mixer grinder. Add grated coconut,green chillies,ginger,mustard seeds and half cup of curd.grind it well to make a fine paste.
Step 4
when the beetroot is cooked well,tranfer the grinded coconut mix into it and mix well.pour half cup of water and adjust the salt.then allow it to boil.
Step 5
When the beetroot coconut mix is well cooked,add 1 cup of curd into it and mix well.turn off the flame.
Step 6
finally put another pan on medium flame.add coconut oil.splutter mustard seeds.add curry leaves and dried red chillies.transfer immediately to the cooked beetroot and mix well.
Step 7
Delicious and beautiful beetroot pachadi is ready!!
