Step 1
Dry roast all the above mentioned "Masala Paste" ingredients (excluding water) and transfer into a mixer jar. Initially grind them into fine powder and then add water to make a fine paste and put aside. Also cook the toor dal and prepare the tamarind pulp/
Step 2
Take a khadai and add oil. After it heats add fenugreek seeds followed by mustard and cumin seeds. Now add green chillies and dry red chillies. Continue by adding curry leaves and asafoetida powder and mix thoroughly.
Step 3
Later add shallots and cook until they turn soft and transparent. Now add carrots, potatoes and turn the flame to low and put the lid and cook the vegetables. When the veggies turn half cooked add tomatoes and let all of the cook to 90%.
Step 4
Now add salt , red chilli powder and mix thoroughly. Now add the ground masala paste ( Or simply use the sambar masala powder- recipe in my profile). Mix and cook the mixture for a minute.
Step 5
Now mash the cooked dal and transfer the tamarind pulp and mix together. Add the mixture into the khadai and bring it to boil. Add coriander leaves and water to adjust consistency. Let the sambar boil for at least 5 mins. Now dish out and serve hot.
