Step 1
Sift together flour, cocoa powder, corn starch, baking soda and salt, whisk well. Set aside.
Step 2
Using a hand held beater or stand mixer beat the butter for a minute.
Step 3
Add brown sugar and granulated sugar and beat for 2- 3 minutes. The mixture should be light, creamy and fluffy. Scrap the bowl from the bottom using a spatula in between to ensure even mixing.
Step 4
Add vanilla extract, Food color, milk and mix well on medium speed until food color is evenly distributed. Add white vinegar and beat for a few seconds.
Step 5
Add flour mixture gradually into the butter mixture and beat on slow speed until a soft dough is formed. The dough will be sticky now. Cover the dough with a cling wrap and refrigerate for at least 30 minutes.
Step 6
Pre heat oven to 350 F . Line the baking tray with parchment paper.
Step 7
Scoop out 1 1/2 tbsp of dough, roll into a ball, flatten it very slightly and place it on the baking sheet. Repeat with the remaining dough but ensure to leave space between the cookie balls.
Step 8
Bake the cookies for about 8-10 min. Remove from oven. The cookies will still be soft. Stick in the white chocolate chips into the cookies at this stage and bake again for 2 more minutes.
Step 9
Remove tray from oven and let the cookies cool down for about 5 minutes. Transfer the cookies to a cooling rack and let them cool completely before serving and storing
