Step 1
Preheat oven to 350 degrees and keep a lightly greased baking sheet on it
Step 2
In a small bowl, combine the parmesan cheese, cream cheese, crumbled bacon, chives, garlic, salt, and pepper (keep aside some chives and bacon for garnish).
Step 3
Halve each jalapeño lengthwise. Remove seeds and membranes using a paring knife (please use gloves!).
Step 4
Using a spoon, spread the cheese mixture evenly into each jalapeño half.
Step 5
Melt butter and pour over the panko bread crumbs. Using your hands, mix it evenly. Sprinkle evenly over each popper. Place the peppers, cut side up, on a baking sheet and bake on the bottom rack until the cheese has melted, jalapeños have softened and panko is golden brown. This should take about 30 minutes.
Step 6
Remove from the oven, sprinkle the left over chives and bacon on the poppers. Enjoy while it is warm!
