Late-August Peach Ice Cream
No one signed the founding document. No committee voted. The season simply arrived, the peaches were ready, and the rest followed.
Ingredients
- 4 -5 medium ripe peaches (Prunus persica) (Peeled, pitted, and mashed or finely chopped - late August varieties preferred for maximum sugar content)
- 2 tablespoons granulated sugar (To macerate the peaches; adjust to the natural sweetness of the fruit)
- 1 teaspoon fresh lemon juice (Helps preserve color and brightens the peach flavor)
- 2 cups heavy cream
- 1 cup whole milk
- 0.75 cup granulated sugar (Dissolved fully into the cream and milk)
- 4 egg yolks (For a custard-style base; can be omitted for a lighter Philadelphia-style preparation)
- 1 teaspoon pure vanilla extract
- Pinch fine salt (Balances sweetness)

Whisk egg yolks and the remaining 3/4 cup sugar together in a medium bowl until the mixture is pale and slightly thickened. Warm the cream and milk together in a saucepan over medium heat until just steaming - do not boil. Slowly pour the warm cream mixture into the egg yolks while whisking constantly to temper the eggs. Return the full mixture to the saucepan and cook over medium-low heat, stirring continuously with a wooden spoon or heat-resistant spatula, until the custard thickens enough to coat the back of the spoon. Remove from heat.', 'performTime': None}
