Home Assembly TV Dinner - Turkey Tray

Home Assembly TV Dinner - Turkey Tray

A tray of food heated in an oven while the television flickered - and nothing about eating, or time, or who owed it to whom, was ever quite the same.

Ingredients

  • 2 thick slices (approx. 4 oz each) Roasted turkey breast (Pre-roasted and sliced; use bone-in breast roasted simply with salt, black pepper, and butter for closest period approximation)
  • 0.5 cup Turkey pan drippings or unsalted chicken stock (For gravy base; drippings preferred)
  • 1 tablespoon All-purpose flour (For thickening the gravy)
  • 0.25 teaspoon Kosher salt
  • 0.125 teaspoon Black pepper
  • 1 cup Day-old cornbread, crumbled (Plain, unsweetened cornbread preferred; approximates the period-accurate dressing style)
  • 0.25 cup Celery, finely diced
  • 2 tablespoons Onion, finely diced
  • 3 tablespoons Unsalted butter
  • 0.25 cup Turkey stock or chicken stock (To moisten the dressing before tray assembly)
  • 0.25 teaspoon Dried sage
  • 0.25 teaspoon Kosher salt
  • 0.75 cup Frozen green peas (Period-accurate; the original Swanson tray used peas as a standard vegetable component)
  • 1 tablespoon Unsalted butter
  • Pinch Kosher salt
  • 2 Oven-safe divided serving trays or individual baking dishes with sections (Period aluminum compartment trays can be sourced; modern ceramic divided baking dishes are a practical substitute for home use)

In a skillet over medium heat, melt butter and soften the diced celery and onion until translucent, approximately 5 minutes. Combine with crumbled cornbread, sage, salt, and enough stock to lightly moisten the mixture - it should hold a shape when pressed but not be wet. Set aside.', 'performTime': None}
  2. 2{'dependencies': {'description': 'Previous step', 'depends_on_ids': []}, 'description': 'Make the pan gravy. In a small saucepan, warm the turkey drippings or stock over medium heat. Whisk in flour and cook for 1-2 minutes to eliminate the raw flour taste. Continue whisking and cooking until the gravy reaches a pourable consistency. Season with salt and pepper. Keep warm on low heat.', 'performTime': None}
  3. 3{'dependencies': {'description': 'Previous step', 'depends_on_ids': []}, 'description': 'Prepare the peas. Briefly blanch or steam frozen peas just until thawed and heated through, 2-3 minutes. Toss with butter and a pinch of salt. Do not overcook; the peas will finish heating in the oven during tray assembly.', 'performTime': None}
  4. 4{'dependencies': {'description': 'Previous step', 'depends_on_ids': []}, 'description': 'Assemble the trays. Preheat oven to 375 degrees Fahrenheit. Into each compartment tray or divided dish, place one turkey slice with a spoonful of gravy spooned over the top, a portion of cornbread dressing pressed into its section, and a portion of buttered peas in the third section. The gravy should be applied generously enough to keep the turkey moist during oven heating.', 'performTime': None}
  5. 5{'dependencies': {'description': 'Previous step', 'depends_on_ids': []}, 'description': 'Oven finish. Cover trays loosely with aluminum foil and bake at 375 degrees Fahrenheit for 20-25 minutes, until everything is heated through and the dressing edges are lightly crisped. Remove foil for the final 5 minutes if a firmer dressing surface is preferred. Serve immediately.', 'performTime': None}
