Grilled Bratwurst with Beer and Onion Poach

Grilled Bratwurst with Beer and Onion Poach

A sausage old enough to predate the printing press has become, in America, the unofficial centerpiece of summer itself.

Ingredients

  • 6 fresh bratwurst links (Uncooked, not pre-browned. If available, source from a regional German-American butcher for closer historical lineage. Pork-based, natural casing preferred.)
  • 24 oz lager or pilsner beer (A German-style lager is closest to tradition. Avoid heavily hopped American IPAs, which make the liquid bitter.)
  • 2 large yellow onions (Sliced into half-rings. The onion is as important as the beer - it caramelizes and serves as a condiment.)
  • 2 tablespoons unsalted butter
  • 1 teaspoon whole black peppercorns
  • 2 cloves garlic (Lightly crushed, not minced.)
  • 6 sturdy brat buns or semmel rolls (A firmer roll holds up to the sausage and onion weight. Soft hot dog buns are a modern substitution that collapses under use.)
  • to taste stone-ground or spicy brown mustard (Yellow mustard is an American convention. Stone-ground is closer to German table tradition.)
  • optional sauerkraut (Fermented, not canned in vinegar brine if possible. The acidity cuts the fat of the sausage.)

In a wide, heavy pot or deep cast-iron skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, for 10-12 minutes until softened and beginning to color at the edges. Add the garlic and peppercorns, then pour in all the beer. Bring to a gentle simmer - not a boil. A hard boil will toughen the sausage casing.', 'performTime': None}

Maintain a gentle simmer for 15-20 minutes, turning once at the halfway point. The sausages will be cooked through but not yet browned. Do not pierce the casings at any point - the fat and juice inside are the product of the craft, and puncturing them wastes both.', 'performTime': None}
  3. 3{'dependencies': {'description': 'Previous step', 'depends_on_ids': []}, 'description': 'Grill to Finish. Prepare a grill for medium-high direct heat. Remove the bratwurst from the poaching liquid and place directly on the grill grates. Grill for 3-4 minutes per side, rotating once or twice, until the casing is deeply browned and has developed visible grill marks. The exterior should be taut and beginning to blister slightly at the ends - this is correct.', 'performTime': None}

This is the 'hot tub' method used at Midwestern stadium and festival concessions to hold sausages at serving temperature without drying them out. Serve from the pot, spooning beer-softened onions over each sausage in the bun.", 'performTime': None}
  5. 5{'dependencies': {'description': 'Previous step', 'depends_on_ids': []}, 'description': 'Serve. Place each bratwurst in a bun. Top with the beer-cooked onions, a line of stone-ground mustard, and sauerkraut if using. Serve immediately.', 'performTime': None}
