Classic Chocolate Pots de Crème

Classic Chocolate Pots de Crème

A custard this old does not require a certificate of occasion - only a porcelain pot and patience.

Ingredients

  • 6 large egg yolks (Room temperature; yolks alone produce a richer, denser set than whole eggs)
  • 2 cups heavy cream (Full-fat; half-and-half may be substituted for a lighter result but alters the classical texture)
  • 0.25 cup whole milk
  • 3 tbsp granulated sugar (Adjust to taste; classical versions are less sweet than modern expectations)
  • 0.25 tsp fine sea salt
  • 4 oz dark chocolate (70% cacao), finely chopped (Theobroma cacao; quality matters here - the chocolate is the primary flavor)
  • 1 tsp pure vanilla extract (Vanilla planifolia; or 1/2 vanilla bean, split and scraped)
  • To taste lightly whipped cream (Optional; unsweetened or very lightly sweetened to contrast the custard)
  • Optional flaky sea salt (A modern addition not present in classical versions; see historian note)
