Step 1
Soak washed safed or white vattana overnight in 2 cups of water & cook it in cooker by adding a pinch of turmeric & chilly powder.
Step 2
Take a kadai put oil in it & saute onions, ginger-garlic paste & curry leaves. Put turmeric, chilly powder & coriander powder & saute again. Add tomatoe & salt & saute till tomatoes are smashed, add 1/2 cup of water close the kadai with a lid & cook till tomatoes, onions & all other ingredients form a thick gravy.
Step 3
Add boiled vattana & cook for 5 to7 minutes with closed lid. Now vattana curry is ready. Put 2 sprigs of curry leaves & serve it hot after 5 minutes.
Step 4
Vattana curry can be had with rotis/dosas. You can also add garam masala & coriander leaves as per your liking.
