Step 1
Preparation of Green chutney & Tamarind chutney - Refer to my Dahi-sev-bhata puri recipe.
Step 2
Boil potatoes & smash them well . Put turmeric powder, chaat masala, jeera powder & make it into balls. Take flat pan put 3 tbsp of oil in it & heat it on gas. Apply oil on the palms & flatten the rounded potato balls & put it in the pan & cook the flattened potatoes on gas on both sides till the potatoes are done from both sides. Do not deep fry. Pattice is ready
Step 3
Keep safed or white vattana for soaking overnight & cook it in cooker . Also add turmeric & chilly powder & pressure cook it in cooker giving whistles required to cook the vattana well. Switch off the gas & keep it aside for the pressure to release normally.
Step 4
Then take a kadai, put oil in it , crackle whole jeera , put ginger-garlic paste put turmeric , red chilly powder, coriander powder, salt & finally put boiled vattana & boil it till the vattana masala is cooked well. Ragada or vattana curry is ready.
Step 5
Now take a flat dish place the flattened potatoes or pattice on it, pour the vattana masala over it, put over it green chutney & tamarind chutney, put cut onions & cut coriander leaves over it. Also sprinkle red chilly powder, chaat masala , jeera powder. Ragada pattice is ready, serve it hot.
