pan cake (kerala style)
This Pan cake is a sweet preparation but also can be had with chutney. It is a favourite dish among small kids for their school tiffin.

Step 1
Mix maida & salt in a vessel. Add water & mix it with hand into a smooth batter like for dosas.
Step 2
Beat eggs in a small bowl till it is fluffy. Then add it into the maida batter & mix well & keep it aside.
Step 3
Keep a kadai on gas, put oil in it & saute the coconut till it turns light brown in colour.
Step 4
Now keep a flat pan on gas, apply oil on it & pour the maida batter into the pan & make it like dosa. After one side has cooked well , flip it to other side & cook for a second, then again flip it over. Put fried coconut on the centre of the dosa, put 1 tbsp of sugar over it & fold the dosa from both sides (Refer photo 1, 2 & 3)

Pan cake is ready. Serve it hot. It is a favourite dish among small kids for their school tiffin.
