Use powdered jaggery.
Step 1
Wash & cut bitter gourd into small pieces & half cook the bitter gourd in water with 1/2 tsp turmeric & red chilly powder with closed lid. By the time it is half cooked water should have completely evaporated.
Step 2
Pour oil in a kadai & put cut onions into it along with bitter gourd, 1/2 tsp turmeric & chilly powder & saute for 2 to 3 minutes
Step 3
Next, add 1 tsp salt & cook with closed lid till it is completely done. It will have a slightly fried look.
Step 4
After it is completely cooked put jaggery into it & saute for 2 to 3 minutes. You can increase or decrease the jaggery as per your preference for sweetness of the sabji.
