This comforting dish combines the richness of savory meat with an airy, crisp pudding crust made from wheat flour, eggs, and milk. The traditional technique of resting the batter ensures a superior rise and texture, making it a satisfying main course perfect for a hearty meal.

Ingredients

  • 1 1/2 pounds Tender mutton neck meat (or cooked leftover meat/chicken) (Originally 'ratal vya' (approx 1.25 to 1.5 lbs). Cut into small pieces. Can substitute with cooked cold meat or chicken.)
  • 1 1/4 cups Wheat flour (All-purpose flour) (Originally '15 tolas' (approx 175g).)
  • 2 1/2 cups Whole milk (Originally 'sher vyavya' (approx 1.25 seer).)
  • 2 large Eggs
  • 1 teaspoon Salt (Originally '1 flat small spoon'.)
  • 2 tablespoons Butter (Quantity estimated for greasing the dish.)

Instructions

  1. 1Separate the eggs. Beat the yolks with a fork until thin. Beat the egg whites separately until they form stiff peaks.
  2. 2Cut the mutton neck (or leftover meat) into small pieces. If using raw meat, wash it once with cold water and drain well.
  3. 3Mix the milk into the beaten egg yolks. Gradually add the flour to this liquid mixture, stirring constantly to ensure it is smooth and free of lumps. (Note: For best results, fold in the stiff egg whites just before baking, though traditional methods may mix them here).
  4. 4Transfer the batter to a tinned or non-reactive vessel and let it rest for 3 hours. This resting period allows the gluten to relax and ensures a better rise.
  5. 5Preheat oven to 375°F (190°C). Generously butter a pie dish or baking dish that fits all ingredients. Place the meat pieces in the dish and sprinkle the salt over them. If you reserved the stiff egg whites, fold them into the batter now. Pour the batter over the meat. Bake in the moderate oven for about 30-40 minutes until the batter is puffed, crisp, and a rich golden red color.
