These unique Victorian-era sweet potato puffs transform humble mashed potatoes into an elegant, airy dessert similar to a soufflé. Enriched with rich butter, sugar, and aromatic spices like nutmeg and fresh lemon zest, the batter is lightened with beaten egg whites to create a delicate texture. Ingredients

  • 1 pound Potatoes (boiled and mashed) (Originally '1 ratal'. Use starchy potatoes for best texture.)
  • 1/2 cup Granulated sugar (Originally '0.25 ratal' (approx 1/4 lb).)
  • 1/2 cup Butter (softened) (Originally '0.25 ratal' (approx 1/4 lb).)
  • 8 large Eggs (separated)
  • 1 cup Whole milk (Originally '1 pasher' (approx 8 oz).)
  • 1 whole Nutmeg (grated) (Grated fresh. Can reduce to 1-2 teaspoons if preferred.)
  • 1 whole Lemon (juice and zest) (Use both the finely chopped peel (zest) and the juice.)
  • 1 teaspoon Vanilla extract (Originally '1 spoon vanilla essence'.)
  • 2 tablespoons Butter (For greasing the molds (quantity estimated).)

Instructions

  1. 1Preheat your oven to 350°F (175°C). Generously grease small cake tins, muffin tins, or ramekins with butter.
  2. 2Separate the eggs. In a bowl, beat the egg yolks thoroughly with a fork until creamy. In a separate clean bowl, whisk the egg whites until they form stiff peaks.
  3. 3To the beaten egg yolks, add the mashed potatoes, sugar, softened butter, milk, grated nutmeg, lemon juice, lemon zest, and vanilla extract. Mix everything together thoroughly until well combined.
  4. 4Gently fold the stiff egg whites into the potato mixture until just combined, being careful not to deflate the batter. Pour the mixture into the prepared greased tins (filling them about 3/4 full). Bake in the preheated moderate oven for 25-30 minutes until puffed and golden brown.
