Sugar Paste Decorations (Gum Paste)

Sugar Paste Decorations (Gum Paste)

This traditional confectioner's recipe creates a versatile sugar paste, similar to modern gum paste, used for crafting elegant cake decorations. Finely ground sugar is bound with dissolved acacia gum to form a pliable yet firm dough that can be tinted with vibrant colors and pressed into intricate molds. Once dried, these delicate sugar flowers and petals add a sophisticated, professional finish to plum cakes and festive desserts.

Ingredients

  • 2 cups Confectioners' sugar (Originally 'very finely ground castor sugar'. Confectioners' sugar is recommended for the smoothest texture. Quantity estimated.)
  • 1 tablespoon Gum Arabic (Acacia gum) (Originally 'baval gum' (acacia gum). Used as a binder. Quantity estimated.)
  • 2 tablespoons Cold water (Quantity estimated. Use enough to dissolve the gum and bind the sugar.)
  • 1 drop Food coloring (Optional. Use gel or liquid color as desired.)

Instructions

  1. 1Soak the gum arabic in the cold water until fully dissolved. Strain the solution through a fine mesh or cloth to remove any impurities.
  2. 2Place the sugar in a mixing bowl. If using color, add it to the sugar or the gum water. Gradually add the strained gum water to the sugar, kneading constantly until a stiff, pliable dough forms. The texture should be firm like a stiff flour dough.
  3. 3Press the sugar paste firmly into small, shallow molds shaped like flowers, petals, or leaves. Carefully remove the shapes from the molds and allow them to dry and harden completely. Use these hardened sugar decorations to garnish plum cakes or other desserts.
