Peppermint Essence
This traditional recipe creates a potent and pure Peppermint Essence by blending high-proof spirits with concentrated peppermint oil. A staple in historical pantries, this homemade extract delivers a clean, intense mint flavor that is superior to many commercial flavorings for use in candies, icings, and desserts. The simple cold-infusion method ensures a shelf-stable aromatic essence that preserves the refreshing bite of peppermint for months.
Ingredients
- 1 pint High-proof food-grade alcohol (Everclear or Vodka) (Originally 'rectified spirits'. Use 190-proof grain alcohol or high-proof vodka. Do NOT use rubbing alcohol or denatured spirits.)
- 1 ounce Food-grade peppermint oil (Originally '1 liqueur glass'. Converted to approx 1 fluid ounce (2 tablespoons). Ensure oil is explicitly labeled 'food grade'.)
Instructions
- 1In a clean glass vessel, combine the high-proof alcohol with the peppermint oil. Stir or shake gently to ensure the oil is fully dissolved into the spirits.
- 2Pour the mixture into small, sterilized glass bottles or vials. Seal tightly with corks or caps to prevent evaporation and preserve the aroma. Store in a cool, dark place.
