This concentrated lemon essence captures the bright, zesty oils of fresh citrus peels steeped in high-proof spirits. Ingredients

  • 1 ounce High-proof vodka or grain alcohol (Originally 'rectified spirits'. Use 80-100 proof vodka or food-grade grain alcohol (like Everclear) for best extraction.)
  • 1 tablespoon Lemon peel (zest only, no white pith) (Originally '1/2 tola' (approx 6 grams). Use the peel of about 1 small lemon, cut into small pieces.)

Instructions

  1. 1Wash the lemon thoroughly and dry it completely. Carefully peel the yellow skin (zest) using a vegetable peeler or knife, avoiding the bitter white pith. Cut the peels into small pieces.
  2. 2Place the lemon peel pieces into a small, clean glass bottle or jar. Pour the alcohol over the peels, ensuring they are fully submerged. Seal the bottle tightly to prevent evaporation.
  3. 3Store the bottle in a cool, dark place for at least 2 weeks to allow the essential oils to infuse into the alcohol (similar to the process for cardamom essence). Shake the bottle occasionally. The liquid will take on a bright yellow color and strong lemon aroma when ready.
