Egg Mixture (Parsi Egg Nog)
Rich and restorative, this traditional Parsi egg mixture acts as a comforting eggnog-style beverage perfect for a quick energy boost. Fresh egg yolk is beaten until pale and creamy, then blended with sweetened milk and a splash of brandy or wine for a warming depth of flavor. Finished with aromatic freshly grated nutmeg, this drink offers a velvety texture and a sophisticated balance of sweet and savory notes.
Ingredients
- 1 cup Whole milk (Originally '1 pasher' (approx 1 cup). Use whole milk for richness.)
- 1 large Egg yolk (Pasteurized) (Originally 'yolk of 1 fresh egg'. Use pasteurized egg yolk for safety as the drink is not cooked after mixing.)
- 1 tablespoon Sugar (Originally '1 flat spoonful'. Adjust to taste.)
- 1 tablespoon Brandy or Wine (Optional. Add more if a stronger flavor is desired.)
- 1 pinch Nutmeg (Freshly grated is best.)
Instructions
- 1Pour the milk into a small saucepan and bring it to a boil (scald it). Remove from heat immediately.
- 2Allow the boiled milk to cool down completely to room temperature or colder.
- 3In a cup or small bowl, beat the egg yolk thoroughly until it becomes thin and pale in color. Add the brandy (or wine) and sugar to the yolk and mix well.
- 4Slowly pour the cooled milk into the egg mixture, stirring constantly to combine evenly. Grate a little nutmeg on top for flavor and serve immediately.
