Cutlets in Ripe Papaya Gravy
This unique Parsi-Gujarati dish transforms leftover meat cutlets into a rich, sweet-and-sour curry using ripe papaya as the base. The natural sweetness of the fruit balances perfectly with spicy green chilies, aromatic ginger-garlic, and a splash of vinegar for a tangy finish. It serves as an excellent way to repurpose fried cutlets into a comforting, saucy main course best enjoyed with rice or rotis.
Ingredients
- 6 pieces Fried Cutlets (Chicken, Mutton, or Minced Meat) (Pre-cooked/leftover cutlets.)
- 1 pound Ripe Papaya (Originally '0.5 seer'. Must be very ripe and peeled.)
- 1/2 pound Onions (Originally '0.25 seer'.)
- 4 tablespoons Ghee (Originally '1 navtank' (approx 2 oz).)
- 1 teaspoon Ginger (Originally '0.5 tola'. Peeled and crushed/paste.)
- 3 cloves Garlic (Originally '6 val'. Peeled and crushed/paste.)
- 3 teaspoons Strong Vinegar
- 2 teaspoons Sugar (Heaped teaspoons.)
- 1 teaspoon Salt (Flat teaspoon.)
- 1 cup Fresh Coriander (Cilantro) (Originally 'leaves of 2 bunches'. Finely chopped.)
- 2 whole Green Chilies (Large size, finely chopped.)
- 1/2 cup Cold Water (Originally 'half pasher' (approx 4-5 oz).)
Instructions
- 1Peel and crush the ginger and garlic into a paste. Peel the onions and chop them finely into small pieces. Wash the coriander leaves and green chilies, then chop them finely. Peel the ripe papaya and cut it into pieces.
- 2In a cooking pot (traditionally a tinned vessel), heat the ghee. Add the chopped onions and fry until they soften. Then, add the ginger and garlic paste and sauté briefly until aromatic.
- 3Add the papaya pieces, chopped coriander, green chilies, and salt to the pot. Pour in the cold water. Cover the pot and cook over low heat (originally 'on embers') until the papaya is completely cooked through and very soft.
- 4Once the papaya is soft, mash or whisk it thoroughly to create a smooth consistency. Mix in the vinegar and sugar. Place the prepared cutlets side-by-side into the gravy. Cover and bring to a boil once more (let it bubble once), then remove from heat immediately.
