Cream of Tartar Drink
This traditional cooling beverage combines the richness of fresh milk with the tangy brightness of lemon and cream of tartar to create a unique, restorative sherbet. The preparation involves a posset-like technique where hot milk is poured over a sweet, tart base, resulting in a smooth drink with a distinct sweet-sour flavor profile. Served chilled, it acts as a refreshing and beneficial tonic perfect for soothing the palate on warm days.
Ingredients
- 1 pound Granulated sugar (Originally '1 Ratal' (approx 1 lb). This creates a very sweet syrup/drink.)
- 2 cups Whole milk (Originally '1 Sher' (approx 1 lb or 2 cups).)
- 1 1/2 tablespoons Cream of tartar (Originally '1.5 Tola' (approx 17.5g). Provides the tartness and medicinal quality.)
- 1/2 fruit Lemon (Use both the juice and the peel (rind).)
Instructions
- 1Peel the lemon half to get the rind strips and squeeze the juice. In a heat-proof jug or pitcher, combine the sugar, cream of tartar, lemon juice, and lemon peel. Mix these ingredients thoroughly.
- 2Pour the fresh milk into a saucepan and bring it to a boil over medium heat. Allow it to bubble up twice (two boils) to ensure it is fully heated.
- 3Immediately pour the boiling milk into the jug containing the sugar mixture. Stir well to dissolve the sugar. Allow the mixture to sit until it has completely cooled down.
- 4Once the drink is cold, remove and discard the lemon peels. Serve the sherbet chilled. It is considered both cooling and beneficial for health.
