Transform simple granulated sugar into a vibrant, decorative topping with this traditional technique for making custom colored sugar. By rubbing food coloring, saffron, or cocoa powder into coarse sugar crystals, you can create sparkling garnishes in pink, yellow, blue, or brown hues. This versatile decoration adds a festive visual appeal and a delightful crunch to Indian sweets (mithai), cakes, and confections.

Ingredients

  • 1 cup Granulated sugar (Originally 'loaf sugar' crushed coarsely. Coarse granulated sugar works best.)
  • 3 drops Food coloring (Pink, Yellow, or Blue) (Originally 'ice cream color'. Use liquid food coloring.)
  • 1 pinch Saffron strands (Optional natural alternative for yellow color.)
  • 1 teaspoon Cocoa powder (Originally 'chocolate powder'. Used for brown colored sugar.)

Instructions

  1. 1If using loaf sugar, crush it coarsely. Otherwise, place the granulated sugar into a bowl. The goal is to have coarse crystals that will hold the color well.
  2. 2For pink sugar: Add a few drops of pink food coloring to the sugar. Rub the sugar vigorously between your palms (wearing gloves is recommended for hygiene and to prevent staining) or mix thoroughly in the bowl until the sugar is evenly coated and turns a pinkish hue.
  3. 3For yellow sugar: Use yellow food coloring or saffron infused in a tiny drop of water. For blue sugar: Use blue food coloring (originally 'gali' or indigo). For brown sugar: Mix in cocoa powder (originally chocolate powder) using the same rubbing method.
  4. 4Spread the colored sugar out in a warm, dry place to let the moisture evaporate and the color set. Once completely dry, store in an airtight container. Sprinkle over sweets, cakes, or desserts as a decorative garnish.
