Ingredients

  • 2 pounds Fresh barberries (Ripe and fresh. Quantity estimated for a standard batch.)
  • 2 pounds Granulated sugar (Use equal weight to the fruit as per original instructions.)

Instructions

  1. 1Thoroughly wash the fresh barberries and remove any stems or debris. Ensure the fruit is ripe and clean before proceeding.
  2. 2In a large, heavy-bottomed preserving pan, combine the prepared barberries with an equal weight of sugar. Stir gently to distribute the sugar.
  3. 3Place the pan over low heat and cook gently until the sugar has completely dissolved. Once dissolved, increase the heat to medium-high and bring the mixture to a rolling boil. Cook, stirring frequently to prevent sticking, until the jam reaches the setting point (220°F / 105°C) or thickens sufficiently to coat the back of a spoon.
  4. 4Remove from heat and skim off any foam that has risen to the surface. Pour the hot jam into sterilized jars, seal tightly, and allow to cool completely before storing in a cool, dark place.
