A refreshing and delicate fruit infusion made by steeping sweet, ripe apples in boiling water to extract their natural essence. This historical beverage is lightly sweetened with powdered sugar and brightened with a splash of fresh lemon juice for a balanced flavor profile. Served ice-cold, it provides a cooling and restorative drink that highlights the pure, subtle taste of fresh apples.

Ingredients

  • 4 whole Ripe apples (sweet variety) (Peeled and finely chopped. Choose a sweet, flavorful variety.)
  • 4 cups Boiling water (Originally '1 seer' (approx 1 liter).)
  • 1/2 cup Powdered sugar (Or to taste. Originally 'chundeli khand'.)
  • 1 teaspoon Lemon juice (To taste.)
  • 2 cups Ice (For chilling and serving.)

Instructions

  1. 1Peel the apples and chop them finely.
  2. 2Place the chopped apples in a heatproof bowl or pitcher. Pour the boiling water over them, cover the container tightly, and let it stand until the liquid has completely cooled to room temperature.
  3. 3Once cool, stir in powdered sugar and lemon juice to taste. Strain the liquid through a fine mesh sieve or cheesecloth to remove the apple pieces.
  4. 4Chill the strained liquid with ice until very cold, then serve immediately.
