Nut Spice Cake
A classic, moist spice cake featuring a rich blend of brown sugar, molasses, and warm spices like cinnamon, clove, and nutmeg. Made with egg yolks and buttermilk for a tender crumb, it's a comforting dessert perfect for any occasion.
Ingredients
- 0.5 cup Unsalted butter, softened (Equivalent to 1 stick or 113 grams)
- 1 cup Light brown sugar, packed
- 0.5 cup Molasses
- 4 units Large egg yolks (Separate from egg whites)
- 1 cup Buttermilk (Modern equivalent for 'sour milk')
- 2.5 cups All-purpose flour
- 1 teaspoon Baking soda
- 1 teaspoon Ground cinnamon
- 0.5 teaspoon Ground clove
- 0.25 teaspoon Freshly grated nutmeg (Equivalent to grating about 1/4 of a whole nutmeg)
- 1 as needed Cooking spray or butter
- 1 as needed All-purpose flour for dusting
Instructions
- 1Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or two 8-inch round cake pans. Ensure the pan is evenly coated to prevent sticking.
- 2In a large mixing bowl, cream together the softened unsalted butter and light brown sugar until light and fluffy. This should take about 3-4 minutes with an electric mixer.
- 3Add the molasses and the four large egg yolks to the creamed butter mixture. Beat until well combined and smooth, scraping down the sides of the bowl as needed.
- 4In a separate medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground clove, and freshly grated nutmeg. Ensure all ingredients are evenly distributed.
- 5Gradually add the dry ingredient mixture to the wet mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix on low speed until just combined after each addition. Do not overmix.
- 6Pour the batter evenly into the prepared baking pan(s). Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Baking time may vary slightly for different pan sizes.
- 7Once baked, remove the cake from the oven and let it cool in the pan for 10-15 minutes. Then, invert the cake onto a wire rack to cool completely before slicing and serving. This cake is delicious plain or with a simple cream cheese frosting.
