CHICKEN AND HAM SANDWICH
A classic early 20th-century sandwich combining chopped ham and cold boiled chicken meat bound together with creamy mayonnaise and seasoned simply with salt and pepper. Served on lightly buttered white bread and garnished with a pickle, it is simple, satisfying, and easy to prepare.
Ingredients
- 1 cup chopped ham (Finely chop cooked ham into small, even pieces so it spreads easily.)
- 1 cup cold boiled chicken meat (Use pre-cooked, cooled chicken. Chop or shred finely. Leftover roast or poached chicken works well.)
- 0 to taste salt (Add a small pinch at a time and taste as you go.)
- 0 to taste pepper (Freshly ground black pepper is ideal, but pre-ground works fine.)
- 0 to taste mayonnaise dressing (Add enough to bind the filling so it is moist but not wet — start with 2 tablespoons and adjust.)
- 8 slices thin slices of white bread (Use a sliced sandwich loaf. Thin slices let the filling be the star. Crusts may be left on or removed according to preference.)
- 0 to taste butter (Soften the butter at room temperature so it spreads easily without tearing the bread. Apply a light, even layer.)
- 4 pieces pickle (Use whole gherkins, cornichons, or dill pickle spears. One piece per sandwich for garnish.)
Instructions
- 1Place 1 cup of finely chopped ham and 1 cup of cold boiled chicken meat into a mixing bowl. Use a fork or spoon to stir them together until evenly combined. Make sure there are no large chunks — the mixture should be easy to spread.
- 2Add a pinch of salt and a pinch of pepper to the ham and chicken mixture. Stir well, then taste a small amount. Adjust the seasoning by adding a little more salt or pepper if needed. Remember that the ham may already be salty, so season cautiously.
- 3Add mayonnaise dressing to the seasoned ham and chicken mixture, starting with about 2 tablespoons. Stir thoroughly until the mixture holds together and is moist enough to spread smoothly. It should not be runny or dripping — add more mayonnaise a little at a time if the mixture still looks dry.
- 4Lay all 8 slices of white bread flat on a clean work surface or chopping board. Using a butter knife, spread a thin, even layer of softened butter across one side of each slice. Make sure to reach all the way to the edges so the bread does not dry out.
- 5Spoon the ham and chicken filling onto the buttered side of 4 bread slices. Use the back of the spoon or a butter knife to spread it evenly all the way to the edges. Place the remaining 4 buttered bread slices on top, buttered side down, pressing gently to hold the sandwich together.
- 6Using a sharp knife, cut each assembled sandwich in half. You can cut diagonally from corner to corner to form triangles, or straight across the middle to form rectangles — whichever you prefer. Press down firmly and cleanly in one motion to avoid squashing the bread.
- 7Arrange the sandwich halves on a plate or serving board. Place one pickle alongside each serving as a garnish. Serve immediately for the best texture.
