AMERICAN CHEESE SANDWICH NO. 2
A tangy, savory cheese spread made from creamed butter, grated American cheese, vinegar, and bold seasonings, served between thin slices of white bread and garnished with a pickle. This simple 1909 sandwich delivers a punchy, old-fashioned flavour in just minutes.
Ingredients
- 2 tablespoons butter (Use unsalted butter at room temperature so it creams easily. If your butter is cold, let it sit out for 15–20 minutes before starting.)
- 0.25 cup grated American cheese (Grate the cheese yourself from a block if possible — pre-grated cheese can be drier. Cheddar is a good modern substitute if American cheese is unavailable.)
- 1 teaspoon vinegar (White wine vinegar or apple cider vinegar both work well. Regular white distilled vinegar is also fine.)
- 1 pinch salt (Add to taste. Start with a small pinch — the cheese and anchovy essence are already salty.)
- 1 pinch paprika (Sweet or smoked paprika both work. Add to taste.)
- 1 pinch mustard (Dry mustard powder is the most historically accurate choice. A very small amount of prepared Dijon mustard can also be used. Add to taste.)
- 1 dash anchovy essence (Anchovy essence is a liquid condiment sold in small bottles near Worcestershire sauce in most supermarkets. It adds deep savory (umami) flavor. A few drops go a long way. Add to taste.)
- 4 slices thin slices of white bread (Use a soft, fine-crumbed white sandwich loaf. Thin-sliced bread (sometimes labelled 'thin-cut') is ideal. Regular sliced bread is also fine.)
- 1 whole or sliced pickle (Use a dill pickle or bread-and-butter pickle for garnish. Slice lengthwise into spears or into rounds — whichever you prefer.)
Instructions
- 1Take 2 tablespoons of butter out of the refrigerator and leave it on the counter until it is soft and easily spreadable — about 15–20 minutes. Room-temperature butter is essential for creaming; cold butter will not blend smoothly. If you are short on time, cut the butter into small cubes to speed up softening.
- 2Place the softened butter in a small mixing bowl. Using a fork or a small whisk, beat the butter vigorously in a circular motion for about 1–2 minutes until it becomes pale, fluffy, and smooth. This process is called 'creaming' — it incorporates a little air and makes the final spread light and easy to mix. Scrape down the sides of the bowl with a spatula as needed.
- 3Add 1/4 cup of grated American cheese and 1 teaspoon of vinegar to the creamed butter. Stir and mash everything together with the fork until fully combined and there are no separate lumps of cheese or butter remaining. The mixture should look like a cohesive, spreadable paste.
- 4Add a pinch each of salt, paprika, and mustard (dry mustard powder or a tiny amount of prepared mustard), plus a small dash of anchovy essence. Stir everything together thoroughly. Taste the mixture — the flavor should be savory, slightly tangy, and mildly spicy. Adjust any seasoning to your preference, adding a little more of any ingredient you like. Be cautious with salt and anchovy essence as both are quite salty.
- 5Lay out 4 thin slices of white bread on a clean cutting board or flat surface. Divide the cheese mixture evenly between 2 of the slices, spreading it right to the edges using a butter knife or spatula. Place the remaining 2 slices of bread on top, pressing gently to sandwich the filling. For neat results, use a sharp knife to cut each sandwich in half diagonally or straight across.
- 6Place the sandwiches on a plate. Slice your pickle into spears or rounds and arrange alongside or on top of the sandwiches as a garnish. Serve immediately for the best texture — the bread is at its freshest right after assembly.
