SOUR SPATZEN
This recipe offers a tangy and flavorful sauce to complement homemade spaetzle, creating a comforting and satisfying meal. The combination of sweet and sour flavors, along with the tender spaetzle, makes this a unique and delicious dish. The sauce is made with simple ingredients like flour, onion, vinegar, and sugar, resulting in a rich and aromatic experience.
Ingredients
- 3 tablespoons All-purpose flour
- 1 tablespoon Butter (or vegetable shortening) (Originally sweet drippings. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
- 1 small Onion (Finely chopped)
- 2 tablespoons White vinegar
- 1 cup Beef or vegetable stock
- 2 tablespoons Granulated sugar
- 1 pound Spaetzle (Quantity estimated (not specified in original recipe))
- 1/2 cup Water (Quantity estimated (not specified in original recipe))
Instructions
- 1In a saucepan, brown the flour with the butter over medium heat for about 2-3 minutes, stirring constantly. Add the chopped onion and cook, covered, over low heat until softened, about 5 minutes, being careful not to brown the onion.
- 2Add the vinegar, soup stock, and sugar to the saucepan. Bring to a boil, then reduce heat and simmer until the sauce reaches the desired consistency, about 10-15 minutes, stirring occasionally.
- 3Cook the spaetzle according to package directions, using water instead of milk to form the dough if making from scratch. Drain the spaetzle.
- 4Pour the sauce over the spaetzle and serve immediately. For a sweeter and sourer sauce, add more sugar to taste.
