Ingredients
- 1 cup Dried peas
- 2 ounces Butter
- 1/2 cup Bread, soaked in milk (Quantity estimated (not specified in original recipe))
- 1/2 teaspoon Salt (Quantity estimated (not specified in original recipe))
- 1 teaspoon Sugar
- 1 each Egg yolk
- 1 each Egg
- 1 ounce Blanched and pounded almonds
- 2 cups Oil (For frying. Quantity estimated (not specified in original recipe))
Instructions
- 1Boil the dried peas in water until tender, approximately 45 minutes. Drain the peas and pass them through a fine sieve to create a smooth puree.
- 2In a bowl, combine the pea puree with the butter, softened to a cream. Add the soaked bread (soaked in milk), salt, sugar, egg yolk, whole egg, and blanched almonds. Stir all ingredients into a smooth paste. If the mixture is too thick, add more egg; if too thin, add more bread.
- 3Heat oil in a frying pan over medium heat. Drop spoonfuls of the pea mixture into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side. Remove the fritters and drain on paper towels.
