This classic Almond Cake, or Mandel Torte, offers a delightful combination of nutty almond flavor and a tender crumb. Ingredients

  • 1/2 pound Almonds
  • 8 count Eggs
  • 1 cup Sugar
  • 1/2 count Lemon
  • 1 tablespoon Brandy
  • 4 count Ladyfingers

Instructions

  1. 1Blanch the almonds by pouring boiling water over them. Then, pound them in a mortar or grate them on a grater (grating is recommended).
  2. 2Vigorously beat the yolks of the eggs with the sugar. Add the grated peel and juice of the lemon, the brandy, and the grated ladyfingers.
  3. 3Fold in the stiffly beaten egg whites and the prepared almonds. Bake in a preheated moderate oven at 350°F (175°C) for 1 hour, or until a toothpick inserted into the center comes out clean.
