To Boil Artichokes
Classic boiled artichokes prepared with a simple method, served with melted butter. The artichokes are soaked, then boiled until tender.
Ingredients
- 4 whole Artichokes, stalks trimmed (Fresh artichokes preferred; older ones require longer cooking)
- 1 tablespoon Salt (For boiling water)
- 4 quarts Water (Enough to cover artichokes)
- 0.5 cup Butter, melted (For serving)
Instructions
- 1Cut off the stalks close to the bottom of each artichoke. Wash them thoroughly under cold running water, spreading the leaves gently to remove any dirt.
- 2Place the trimmed and washed artichokes in a large bowl of cold water and let them soak for 2 to 3 hours. This helps remove any remaining dirt and keeps them fresh.
- 3Fill a large pot with water and add salt. Bring the water to a rolling boil over high heat.
- 4Remove artichokes from the soaking water and place them in the boiling water. Cover the pan tightly with a lid and boil for 1 hour and 30 minutes. If the artichokes are old or not freshly gathered, they may need up to 2 hours. They are done when a leaf pulls away easily and the base is tender when pierced with a knife.
- 5While the artichokes are boiling, melt the butter in a small saucepan over low heat or in the microwave. Transfer to a sauce tureen or small serving bowl.
- 6Remove the artichokes from the pot using tongs and drain well. Place on serving plates and serve hot with the melted butter on the side for dipping.
